Curried Rabbit

Ingredients

Directions

  1. Melt the butter in a stewpan over medium heat.

  2. Chop the onions finely and add them to the melted butter. Fry until light brown, being careful not to burn them.

  3. Prepare the rabbit by washing and drying it. Cut it into equal-sized pieces.

  4. If using veal, cut it into equal-sized pieces as well. Chicken can be used instead if preferred.

  5. Strain the fried onions from the butter and return the butter to the stewpan.

  6. Add the pieces of meat to the stewpan and fry over high heat for 10 minutes, turning occasionally to brown evenly.

  7. Peel and core the apple, then chop it finely.

  8. Once the meat is fried, add the curry powder and salt, stirring well over the heat for 5 minutes.

  9. Add the fried onions and chopped apple to the stewpan.
