Veal and Ham Pie

Ingredients

Directions

  1. On a clean surface, combine ¾ lb. flour, 3 oz. butter, and 2 oz. lard.

  2. Chop the butter and lard into the flour, sprinkle with salt, and make a well in the center.

  3. Add a large tablespoon of water and mix slightly with a knife.

  4. Gradually mix with your fingers, adding more water as needed to form a stiff paste.

  5. Keep your hands and the surface floured to prevent sticking.

  6. Flour a rolling pin and roll out the paste, folding it in half and turning it with rough edges towards you, repeating this three more times.

  7. Roll out the final dough to fit your pie dish, slightly larger than the dish and about ¼ inch thick.

  8. Boil a small saucepan of water, add the eggs, and boil for 10 minutes.

  9. Cut the veal and bacon into small pieces with a sharp knife.
