Puff Paste

Ingredients

Directions

  1. Place the butter on a clean cloth and fold the cloth over it, squeezing out all the water.

  2. Heap the flour on a board and make a well in the center.

  3. Add the salt, lemon juice, and enough water to make a paste with the same consistency as the squeezed butter, then mix well.

  4. Flour a rolling pin and the board to prevent sticking, then roll out the paste to about ¼ inch thick.

  5. Place the pat of squeezed butter on one half of the paste and fold the other half over it, pressing the edges together.

  6. Let it rest on a plate in a cool place for 15 minutes.

  7. Roll out the paste again and fold it into thirds.

  8. Turn it so the rough edges face you, then roll it out and fold it in thirds again.

  9. Let it rest for another 15 minutes.

  10. Roll it out and fold it in thirds twice more.
