Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the main structure of the cake as its starches set during baking.
Dripping
Coats the flour to create a short, tender crumb and greases the tin.
Egg
Binds the mixture and adds structure as it sets in the oven.
Baking powder
Releases gas during baking so the cake rises and becomes lighter.
Sugar
Adds sweetness and helps the crust brown during baking.
Plums or currants
Add moisture and fruit flavour throughout the cake.

The step that matters

Rubbing the dripping into the flour. Rubbing fat into flour until no lumps remain coats the flour particles, which limits gluten formation and gives a short, tender crumb. Leftover lumps of fat or flour can bake into dense or uneven patches.

Swap the plum
