Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, combine ½ lb. of flour and 1 teaspoon of baking powder.

  3. Rub 3 oz. of clarified dripping into the flour until no lumps remain.

  4. Clean and pick over ¼ lb. of currants to remove any stones.

  5. Add the currants, 1 teaspoon of ground ginger or grated nutmeg, and ¼ lb. of sugar to the flour mixture.

  6. Chop 1 oz. of candied peel into pieces and add it to the mixture.

  7. Mix all ingredients together with a wooden spoon.

  8. In a cup, beat 1 egg with 1 tablespoon of milk.

  9. Pour the egg mixture into the bowl and mix until a stiff paste forms.
