Why it works: Shallot and leek share more aroma than cooks usually use. They rank in the top 1% of all ingredient pairs, and cooks put them together in 64 recipes. Both carry 1-octen-3-ol, which smells mushroom, earthy. The science ↓

Ingredients
Directions
Prepare the feet
Chop the calves' feet into eight pieces.
Wash the pieces in cold water.
Place them in a stewpan, cover with cold water, and bring to a boil to blanch.
Pour off the water and wash the feet again in cold water.
Make the stock
Clean the stewpan, return the feet, and add 2 quarts of water.
Bring to a boil, skimming occasionally.
Add salt and all other ingredients except lemon, egg whites, and vinegars.
Wash, scrape, and peel vegetables before use.
Let it boil gently for 5 hours.
Strain the stock through a fine sieve into a basin and let it cool completely.
Skim off the fat and wipe the surface with a cloth dipped in hot water.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Calves' feet
- Release gelatin into the liquid, which sets the stock into aspic when chilled.
- Egg whites
- Bind to fine particles and rise through the stock, clarifying it as they coagulate.
- Lemon
- Adds acidity that brightens the flavour and helps the clarifying egg whites set.
- Vinegars
- Add acidity and aromatic flavour, sharpening the finished aspic.
The step that matters
Return the stock to a clean stewpan with the egg whites and simmer gently. Egg whites must be whisked into the cooled stock and heated slowly so they coagulate and trap cloudy particles. Boiling hard would break up the raft and leave the aspic cloudy.
