Directions

Prepare

  1. Heat the glaze in a stewpan until it turns a reddish‑brown color, watching carefully to avoid burning.

  2. Reduce the heat and fill the stewpan with common stock.

  3. Add the studded onions, carrot, mace, parsley, green onions, bay leaf, and thyme.

Simmer and finish

  1. Simmer gently for about 2 hours, skimming occasionally.

  2. Strain the mixture through a sieve and let it cool, removing any fat once cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Caramelized and simmered onions add sweetness and savory depth to the stock.
Carrot
Adds gentle natural sweetness and body to the simmering liquid.
Bay leaf
Contributes aromatic, herbal notes to the finished stock.

The step that matters

Browning the glaze. Heating the glaze until reddish-brown develops color and roasted flavor through caramelization and browning reactions. If it burns, the stock turns bitter, so heat must be watched closely.
