Fore Quarter of Lamb

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 400°F (200°C).

  2. Grease a large sheet of paper with butter and wrap the lamb in it.

  3. Place the lamb over a clear, even fire.

  4. When nearly done, remove the paper and bacon.

  5. Baste the meat with egg yolk mixed with gravy.

  6. Sprinkle more bread crumbs over the lamb and let it brown nicely.

  7. Squeeze lemon juice over the lamb before serving.

  8. Serve with mint sauce.
