Why it works: Butter and parsley are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 28,563 recipes. Both carry trans-2-hexenal, which smells green, leafy. The science ↓
Raised Pie
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Make a hollow in the middle of the pastry and knead it evenly.
Fill the pie with your desired filling.
Roll out the remaining pastry for the top, moisten edges with egg, and place it on the pie.
Press down securely and pinch the edges with a pastry tool.
Create a small hole in the center and decorate with pastry ornaments.
Brush the top with egg and bake in a preheated oven at 400°F (200°C).
Once baked, pour in a little gravy that will jelly when cold.
If using a mold, butter it and line it with firm pastry before filling and covering.
If the pie is not browned enough, return it to the oven for an additional 15 minutes.
Serve the pie on a neatly folded napkin, garnished with parsley.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
