Meat Pies and Puddings

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Slice the calf's foot into ¼ inch thick pieces.

  2. Season the meat with coarse sea salt, cayenne pepper, and grated nutmeg.

Assemble the pie

  1. Layer kidney at the bottom of a pie dish, followed by minced ham and calf's foot slices, repeating until nearly full.

  2. Add hard-boiled yolks and forcemeat balls on top.

  3. Pour veal stock mixed with lemon juice over the filling.

Bake

  1. Line the edges of the dish with pie crust, cover it, and bake at 350°F (175°C) until golden.

Make the forcemeat balls

  1. For forcemeat balls, mince oysters and mix with breadcrumbs, parsley, lemon rind, and seasonings, binding with an egg yolk and oyster liquor.
