Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main body of the dish, becoming tender through long, slow cooking.
Butter
Carries the curry powder's flavour and adds richness to the sauce.
Curry powder
Supplies the dish's spiced aroma and flavour, released as it is stirred into the fat.
Onion
Softens and sweetens as it fries, forming a flavour base for the curry.
Lemon juice
Adds acidity that brightens the rich, spiced flavour.

The step that matters

Set over a very slow fire for about 1 hour. Low, gentle heat lets the tough connective tissue in the beef break down slowly into tenderness. Higher heat tightens the meat's proteins and can leave it dry or tough, so the pot should barely simmer.

Swap the lemon

How well each one fits the dish's main ingredients (beef, butter, onion):

  1. Avocadofits better
  2. Coconutfits better
  3. Mangofits better
