Roast Larks

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 400°F (200°C).

  2. Arrange the larks on a thin skewer, drawn or not according to your taste.

  3. Brush the larks with melted butter.

  4. Roast the larks for 10 minutes, basting them well.

  5. Serve the larks on buttered toast, topped with fried crumbs and watercress, and garnish with lemon quarters.
