Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Form the bulk of the stuffing and give it a soft, starchy body.
Stock
Cooks the chestnuts and adds moisture and savoury flavour.
Cream
Adds richness and a smoother, softer texture to the purée.
Egg
Helps bind the purée so it holds together when set.
Butter
Adds fat for richness and a smooth mouthfeel.

The step that matters

Passing the mixture through a wire sieve. Sieving breaks down the cooked chestnut fibres into a fine, even purée. Skipping or rushing this leaves a grainy texture that the cream, egg and butter cannot smooth out.

Swap the chestnut
