Ingredients

Directions

The book says “a slow oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the eels

  1. Remove the heads and tails from the eels.

Make the sauce

  1. Stew the eel pieces in the meat stock until thoroughly cooked.

  2. Strain out the heads and tails from the stock.

  3. Mix in pepper, salt, lemon juice, and mushroom ketchup into the stock.

Bake

  1. Place the eel pieces in a pie dish and pour the sauce over them.

  2. Cover with pie crust and bake at 400°F (200°C) until golden.

What each ingredient does

Eels
Provide the main body of the pie, becoming tender as they stew in the stock.
Meat stock
Cooks the eels and forms the liquid base of the sauce, adding savoury depth.
Lemon juice
Adds acidity that brightens the rich, savoury flavour of the sauce.
Mushroom ketchup
Adds concentrated savoury, umami flavour to the sauce.
Pie crust
Encloses the filling and browns in the oven to form a golden top.
