Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold meat
Provides the main protein, and gentle heating keeps it tender in the sauce.
Flour
Thickens the curry sauce as it cooks with the liquid and fat.
Clarified dripping
Carries the curry spices and browns the onion, adding richness.
Curry powder
Supplies the main spiced flavour of the dish.
Apple
Adds mild sweetness that softens the sharpness of the curry spices.
Lemon juice
Adds acidity that brightens the flavour of the finished sauce.

The step that matters

Heat through without boiling. Once the meat is added, boiling can toughen the meat and make the sauce separate or thicken unevenly. Gentle heat keeps the meat tender and the sauce smooth.

Swap the apple

How well each one fits the dish's main ingredients (meat, onion, flour, lemon, rice, pepper):

  1. Limefits better
  2. Avocadofits better
  3. Coconutfits better
  4. Applethe original

Fit is the average pairing score against meat, onion, flour, lemon, rice, pepper. Candidates are from the same food group and used in at least 100 recipes.
