Economically Truffled Turkey

Ingredients

Directions

Prepare the truffles

  1. Use ¼ pound of truffles for a small turkey, or ½ pound for a large one.

  2. Choose large truffles with few irregularities; wash them thoroughly with a soft brush to remove dirt. Do not peel the truffles; slice them thinly.

Stuff and roast

  1. Skin and boil a good quantity of chestnuts as you would for roast turkey.

  2. Mix the sliced truffles with the chestnuts and fill the turkey's body with this mixture 2‑3 days before cooking.

  3. On the cooking day, fill the crop of the turkey with veal stuffing and roast as usual.

  4. Serve with the turkey's own gravy in a hot sauceboat.

What each ingredient does

Truffles
Provide the dish's distinctive aroma, which is absorbed into the surrounding turkey and chestnuts.
Chestnuts
Add starchy body and a soft, moist texture to the stuffing mixture.
Veal stuffing
Fills the crop of the turkey and adds savoury body alongside the roast.

The step that matters

Filling the body 2‑3 days before cooking. Truffle aroma is volatile and spreads slowly into the surrounding flesh and chestnuts, so the mixture needs time to rest inside the bird before roasting for the flavour to carry through.

Swap the chestnut

How well each one fits the dish's main ingredients (turkey, truffle, veal):

  1. Chestnutthe original
  2. Peasfits about as well
  3. Pistachiofits less well
  4. Walnutfits less well

Fit is the average pairing score against turkey, truffle, veal. Candidates are from the same food group and used in at least 100 recipes.
