Ingredients

Directions

  1. Melt the butter in an earthenware stewpan.

  2. Add the minced onion and rice, stirring over the fire for a few minutes without browning the onion.

  3. Add the water or stock and reduce.

  4. Stir in the tomato pulp and more stock or water if needed.

  5. Continue cooking while stirring until nearly all the moisture is absorbed and the rice is cooked.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the body of the dish and absorbs the liquid as it cooks, becoming tender.
Butter
Adds fat that coats the rice grains and carries flavour.
Tomato pulp
Adds acidity and moisture, giving the rice its tomato flavour and colour.
Onion
Adds aromatic flavour as it softens in the butter without browning.

The step that matters

Stirring the onion and rice without browning. Gentle heat keeps the onion sweet and aromatic instead of bitter. Stirring coats the grains in butter and helps them cook evenly.

Swap the tomato

How well each one fits the dish's main ingredients (rice, onion, butter):

  1. Potatofits better
  2. Leekfits better
  3. Chivefits better
  4. Tomatothe original

Fit is the average pairing score against rice, onion, butter. Candidates are from the same food group and used in at least 100 recipes.
