Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Releases flavour, collagen and gelatin into the water, giving the broth body and savour.
Cornflour
Starch that thickens the liquid slightly when added and heated.

The step that matters

Simmer gently rather than boil. A gentle simmer keeps the broth clear and stops fat and proteins from emulsifying into a cloudy liquid. A hard boil makes the broth murky and can toughen the meat.

Swap the clove

How well each one fits the dish's main ingredients (chicken, shallot, parsley, pepper):

  1. Thymefits better
  2. Tarragonfits better
  3. Capersfits better
  4. Clovethe original

Fit is the average pairing score against chicken, shallot, parsley, pepper. Candidates are from the same food group and used in at least 100 recipes.
