What each ingredient does

Kidneys
Provide the main meaty body of the filling, which becomes tender through long slow stewing.
Flour
Thickens the cooking liquid with butter so the filling holds together on the toast.
Butter
Adds richness and helps bind the flour into a smooth, thickening base.
Harvey's sauce
Adds savoury, tangy depth that seasons the kidney mixture through long stewing.
Onion
Leaves a light aromatic flavour in the pan as it is rubbed on the saucepan.

The step that matters

Stew the mixture for at least 30 minutes the day before serving. Kidneys are tough and need long, gentle simmering to become tender. Stewing ahead also lets the flavours blend, and the mixture should be reheated gently so it does not toughen or lose its texture.

Swap the onion

How well each one fits the dish's main ingredients (parsley, flour, butter, sauce, bread):

  1. Shallotfits better
  2. Chivefits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against parsley, flour, butter, sauce, bread. Candidates are from the same food group and used in at least 100 recipes.
