Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Capon
Provides the main meat, which braising keeps moist and tender.
Bacon
Larding adds fat inside the lean breast, keeping the meat juicy as it cooks.
Sweetbread
Adds a soft, rich texture contrasting with the firm braised meat.
Mushrooms
Contribute earthy savour and moisture to the dish.
Truffles
Add a strong, aromatic flavour that defines the dish.

The step that matters

Roasting the breast to golden. Browning the surface after braising builds roasted flavour through the Maillard reaction, but overdoing it dries the lean breast meat, so it needs only a brief, watched roast.
