Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eel
Forms the main body of the dish, with its firm flesh holding shape through poaching and frying.
Egg
Binds the bread crumbs to the eel so the coating sticks during frying.
Bread crumbs
Form a crisp, golden crust that contrasts with the tender fish inside.
Oil
Conducts heat quickly to brown the coating and cook the fish through.

The step that matters

Fry in very hot oil. If the oil is not hot enough, the coating absorbs oil and turns greasy before it browns, while the fish cooks unevenly. Very hot oil sets the crust quickly, keeping the coating crisp and the inside moist.

Swap the parsley

How well each one fits the dish's main ingredients (fish, pepper, egg, bread, sauce):

  1. Capersfits about as well
  2. Parsleythe original
  3. Tarragonfits about as well
  4. Nutmegfits less well

Fit is the average pairing score against fish, pepper, egg, bread, sauce. Candidates are from the same food group and used in at least 100 recipes.
