What each ingredient does

Mutton loin
Provides the meat that is roasted and becomes tender and juicy during slow marination.
Salad oil
Carries the herbs and aromatics and keeps the surface moist during roasting.
Vinegar
Acidity in the marinade gently tenderises the meat and adds a sharp, bright note.
Onion
Flavours the marinade and contributes aromatic sweetness as it softens.
Carrot
Adds subtle sweetness and aroma to the marinade and wrapping.

The step that matters

Basting during roasting. Regular basting with the marinade keeps the surface moist and helps it brown evenly, so the meat does not dry out inside the parchment.
