Drain and dry

  1. Drain the rice completely.

  2. Return the drained rice to the hot stew-pan.

  3. Shake the pan well.

  4. Cover the pan with a clean napkin to dry for 8 to 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Provides the starch and bulk that make up the dish, cooking into separate grains.
Butter
Adds fat and richness and helps loosen grains stuck to the pan.
Lemon juice
Adds acidity that brightens flavour and helps the grains stay white.

The step that matters

Testing the rice before draining. Rice keeps cooking in its own heat after it leaves the water, so a grain pinched too late turns soft and mushy. Testing at the first sign of tenderness and then cooling the rice with cold water stops the cooking at the right point.

Swap the lemon
