What each ingredient does

East india (patna) rice
Its starch releases gradually during stirring and simmering, giving the risotto a creamy texture.
Fresh butter
Fat that enriches the onion and gives the finished dish a rich, smooth mouthfeel.
Onion
Softens and sweetens as it fries, building a mild savoury base for the rice.
Parmesan cheese
Adds savoury, salty depth and helps the finished rice become smooth and cohesive.
Saffron
Provides golden colour and a distinctive floral aroma.

The step that matters

Adding the stock gradually while stirring. Adding liquid in small amounts and stirring releases starch from the rice surface, which makes the dish creamy. Adding it all at once or stopping stirring leaves the rice unevenly cooked and less creamy.
