What each ingredient does

Puff pastry
Its layers of dough and fat puff apart in the oven, giving the straws a light, flaky texture.
Parmesan or gruyere cheese
Adds savory, salty flavor and browns and crisps as it bakes.

The step that matters

Bake until golden on a wire rack. Cheese browns quickly and can scorch before the pastry sets. A wire rack lets hot air reach all sides, so the straws crisp evenly. Watch color rather than only time.
