Rabbit Pie

Ingredients

Directions

  1. Skin and wash the rabbit, then cut it up as for a stew.

  2. Soak the pieces in cold water, then drain and dry them with a clean cloth.

  3. In a large saucepan, combine the rabbit scraps, beef, and broth flavoring ingredients to make broth.

  4. Skim the fat off the broth once it's ready.

  5. Prepare a plain stuffing using half the quantity of ingredients as for turkey, mixing in the liver.

  6. Assemble the pie with the rabbit, stuffing, and broth, then cover with pastry and bake.
