What each ingredient does

Veal breast
Forms the main body of the dish, becoming tender through slow stewing.
Sweetbread
Finely minced, it adds richness and a soft, delicate texture to the stuffing.
Veal forcemeat
Forms a thin layer under the skin that moistens and flavors the meat as it cooks.
Veal stock
Provides liquid for stewing and body for the final gravy.
White wine
Adds acidity and aroma to the cooking liquid, balancing the richness of the veal.
Butter
Adds fat and flavor, and buttered paper helps protect the meat from drying.

The step that matters

Raising the skin and spreading the forcemeat. The forcemeat must lie in an even, thin layer and the edges must be sewn tightly. Gaps or thick spots let filling leak or cook unevenly during the long stew, so the meat is not properly moistened or held together.
