Turkey, Roasted

Ingredients

Directions

  1. Remove the breast-bone from the turkey, leaving it attached at the tip.

  2. Fill the body with veal sausage meat mixed with oysters.

  3. Stuff the breast with creamy chestnut forcemeat.

  4. Use strings and skewers to shape the bird, then cover it entirely with greased paper.

  5. Lay sliced bacon on the breast.

  6. Cook the turkey until done, then garnish with fried oysters and small sausages made from the filling.

  7. Serve with oyster sauce or brown gravy.
