What each ingredient does

Button mushrooms
Provide the main body and earthy flavour of the forcemeat.
Bread crumbs soaked in milk
Absorb moisture and give the forcemeat a soft, binding texture.
Olive oil
Carries flavour and helps soften the mushrooms while adding richness.

The step that matters

Stir until the mushrooms begin to soften. Mushrooms are mostly water. Cooking them in hot oil drives off moisture so the mixture does not turn wet and watery when the bread crumbs are added.
