Why it works: Nutmeg and pepper match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Beef, Potted

Ingredients

Directions

  1. If using very lean beef, use plenty of butter. If the meat is fatty, use equal parts of fat and lean beef with 2 ounces of butter.

  2. Mix the beef with butter and season with cayenne, nutmeg, and black pepper. Do not add salt.

  3. For fresh boiled beef, add salt and a dash of anchovy for improved flavor.

  4. If using spiced beef, pound it with butter before adding any additional seasoning.
