Potted Meats and Fish

Ingredients

Directions

  1. Form a basket shape with the meat, using a flat cap wire for the handle.

  2. Cover both sides of the basket with curled butter.

  3. Add cream to the meat while pounding for a whiter appearance, if desired.

  4. Decorate the basket with green butter, ham butter, or egg butter.

  5. Serve the basket on a block of stiff jelly to prevent cracking.

  6. Garnish with a plain green salad or parsley with eggs.
