What each ingredient does

Scraps of meat
Provides the main protein and substance of the curry.
Onion
Softens and sweetens as it fries, forming the flavour base of the curry.
Browned flour
Thickens the stock into a sauce and adds a toasted, nutty flavour.
Curry powder
Supplies the spice aroma that defines the dish.
Apple
Adds mild sweetness and acidity that balance the spices.

The step that matters

Keep the meat below boiling point. Boiling toughens and dries meat proteins, so the meat should simmer gently once it is added to the sauce. Cooked meat only needs heating through.

Swap the apple

How well each one fits the dish's main ingredients (meat, onion, flour, pepper):

  1. Avocadofits better
  2. Limefits better
  3. Lemonfits better
  4. Applethe original
