Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Canned asparagus
Provides the main body and flavor of the cakes.
Eggs
Bind the mixture together so it holds its shape while frying.
Bread crumbs
Absorb moisture and give the cakes structure and a crisp, browned coating.

The step that matters

Adding bread crumbs gradually. Bread crumbs absorb liquid from the eggs and asparagus. Adding them slowly lets you stop once the mixture can be molded, so the cakes stay moist inside and don't turn stiff or dense.

Swap the asparagus

How well each one fits the dish's main ingredients (egg, pepper, parsley, bread):

  1. Capsicumfits better

  3. Shallotfits about as well
  4. Asparagusthe original

Fit is the average pairing score against egg, pepper, parsley, bread. Candidates are from the same food group and used in at least 100 recipes.
