What each ingredient does

Haricot beans
Provide the main body and thick texture of the soup once pureed.
Butter
Adds richness and a smooth, rounded mouthfeel to the soup.
White stock
Supplies the liquid base and most of the savoury flavour.
Cream
Adds richness and softens the flavour when stirred in at the end.

The step that matters

Rub the cooked beans through a sieve. Pressing the soft beans through a sieve breaks them into a fine pulp that thickens the soup and gives it a smooth texture. Beans that are not cooked through will stay grainy and leave lumps.

Swap the beans

How well each one fits the dish's main ingredients (butter, cream, pepper, bread):

  1. Lima beansfits about as well
  2. Almondfits about as well
  3. Chestnutfits about as well
  4. Beansthe original

Fit is the average pairing score against butter, cream, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
