Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the dish; slow braising turns its connective tissue tender.
Butter
Carries heat for browning the veal and adds richness to the pan.
Onion
Releases sugars and aromatic flavor into the braising liquid as it cooks.
Carrot
Adds sweetness and body to the braising gravy as it softens.

The step that matters

Brown the veal on all sides. Searing creates browned flavor through the Maillard reaction. Veal pale from crowding or low heat will taste flat, and the gravy built from the pan will lack depth.

Swap the onion

How well each one fits the dish's main ingredients (veal, butter, carrot, turnip, celery, pepper):

  1. Leekfits better
  2. Parsnipfits better
  3. Spinachfits about as well
  4. Onionthe original

Fit is the average pairing score against veal, butter, carrot, turnip, celery, pepper. Candidates are from the same food group and used in at least 100 recipes.
