Jelly Roll

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 400°F (200°C).

  2. Cream the butter and sugar until very soft.

  3. Beat in the eggs one by one, continuing to beat for 5 minutes.

  4. Mix the flour, salt, and baking powder together.

  5. Gently fold the dry ingredients into the egg mixture, then add the milk.

  6. Spread the mixture evenly in a greased and paper-lined baking tin, with the paper edges higher than the tin.

Bake

  1. Bake for 10 to 12 minutes, or until spongy and lightly browned.

  2. Turn the cake out onto sugared paper, brown side down.

Fill and roll

  1. Spread with jelly and roll up lightly.

  2. Melt a little jelly and brush it over the top of the roll, then place a line of cherries down the center.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten into the batter, they trap air and set to give the sponge its structure.
Butter
Creamed with sugar, it traps air and adds softness and richness to the crumb.
Sugar
Adds sweetness and, with the butter, helps aerate the batter; it also browns the surface.
Baking powder
Releases gas in the oven, lifting the batter so the sponge rises.
Milk
Adds moisture and loosens the batter so it spreads evenly.
Red currant jelly
Adds sweetness and a tart fruit flavour to the filling.

The step that matters

Bake only until spongy and lightly browned. A sponge baked just until it springs back stays moist and flexible enough to roll. Overbaking dries the crumb, so it cracks and splits when rolled up with the jelly.

Swap the red currant

How well each one fits the dish's main ingredients (egg, butter, sugar, milk):

  1. Vanillafits better
  2. Figfits better
  3. Coconutfits better
  4. Red currantthe original

Fit is the average pairing score against egg, butter, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
