Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk and fruit flavour, and their pectin helps the pulp hold its body.
Pounded loaf sugar
Sweetens the pulp and dissolves into the warm apple purée as it is pressed through.
Egg whites
Whipped into foam, they lighten the mixture and give it a stiff, airy texture.

The step that matters

Beating the egg whites until very stiff. Egg white foam holds air only when whipped far enough and kept free of grease or yolk. Under-whipped whites collapse, leaving the cream dense and runny instead of light.

Swap the apple

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Applethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
