Why it works: Bread and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 27,232 recipes. Both carry delta-decalactone, which smells sweet, creamy. The science ↓
Eggs in Cases
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Preheat the oven to 400°F (200°C).
Butter 4 small ramekin or china cases well inside.
Sprinkle a little salt and pepper into the bottom of each case.
Assemble and bake
Carefully drop an egg from the shell into each case.
Sprinkle a little grated bread and cheese over each egg.
Place a small piece of butter on top of each.
Bake in the oven for about 3 minutes, until the eggs are set.
Serve in the cases.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Set into a firm yet tender custard as they bake, forming the body of the dish.
- Grated cheese
- Adds savoury flavour and helps brown the surface as it melts and heats.
- Grated bread
- Crumbs soak up a little moisture and add a light texture on top of the egg.
- Butter
- Adds richness and fat, helping the top brown and the eggs taste rounder.
The step that matters
Bake until just set. Egg proteins firm as they heat, and past that point they turn rubbery and dry. Pulling the ramekins when the whites are set but the yolks still look soft keeps the texture tender.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
