Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Vegetable Marrow Preserve

Ingredients

Directions

Prepare the marrow

  1. Allow the marrow to stand for a few days until quite ripe.

  2. Rub the marrow with a damp towel.

  3. Skin the marrow thickly.

  4. Remove the heart, seeds, and skins.

  5. Place the removed parts in a jelly pan covered with water. Boil for 1 hour.

  6. Strain the liquid.

  7. Cut the marrow into 2‑inch by 1‑inch pieces. Weigh the pieces.

Make the preserve

  1. For every 1 lb of marrow, use 1 lb of Demerara sugar and the juice and rind of 1 lemon.

  2. In the pan, add the sugar. For each 1 lb of marrow, add 1 teacup of the strained liquid.

  3. Bring to a boil.

  4. Add the marrow pieces, lemon juice, lemon rind, and 2 oz of stick ginger. Boil for 45 minutes, stirring almost constantly until clear.

  5. Optionally add finely chopped preserved ginger.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Vegetable marrow
Forms the bulk of the preserve and becomes tender and translucent as it cooks in syrup.
Demerara sugar
Sweetens the preserve and, with the cooking, thickens it into a syrup that sets it.
Lemon
Adds acidity and brightness that balance the sweetness of the sugar.
Stick ginger
Adds warm, aromatic spice flavour to the preserve.

The step that matters

Stirring while the preserve boils. Sugar can scorch on the base of the pan as the syrup thickens, which gives a burnt taste. Stirring almost constantly for the full 45 minutes keeps the mixture moving and helps it cook evenly until it turns clear.

Swap the ginger

The recipe marks ginger as optional. How well each one fits the dish's main ingredients (sugar, lemon):

  1. Cinnamonfits better
  2. Gingerthe original
  3. Marjoramfits about as well
  4. Corianderfits about as well

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
