What each ingredient does

Lean meat
Provides the savoury flavour and the protein that gives the tea its body.
Cold water
Draws out the meat's juices and flavour slowly, without cooking the meat.

The step that matters

Pressing the meat while it stands. Pressing breaks up the muscle fibres so more juice and flavour release into the cold water during the standing time. Without it, the tea will be weaker.
