Why it works: Flour and raisin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. In a large bowl, cream together the butter and sugar until smooth.

  2. Add 2 eggs. Beat for 5 minutes.

  3. Repeat until all 12 eggs are added.

  4. Shake in a handful of flour.

  5. Mix in the remaining flour and raisins.

Prepare the tin

  1. Butter the cake tin.

  2. Line the bottom with strong paper.

  3. Brush the inside with melted butter.

  4. Dust with powdered sugar and a little flour.

Bake

  1. Pour the mixture into the prepared tin.

  2. Bake at 350°F (175°C) for about 2 hours.

Flour and butter barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with the sugar to add richness and a tender crumb.
Eggs
Bind the batter and add structure as the cake sets.
All-purpose flour
Forms the structure of the cake as it bakes.
Sultana raisins
Add chewy pockets of sweetness throughout the cake.
Soft sugar
Sweetens the batter and helps give a tender texture.

The step that matters

Adding the eggs one at a time while beating. Adding eggs gradually while beating keeps the creamed butter and sugar emulsified. If the eggs go in too quickly, the batter can curdle, which may affect the texture of the finished cake.
