Brown Sauce

Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and 14,555 recipes mention both. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the sauce as it cooks with the fat and stock, and browning it adds colour and flavour.
Dripping
Fat that carries the flavour of the vegetables and helps the flour brown.
Second stock
Liquid that hydrates the flour into a smooth, thickened sauce.
Onion
Softens and sweetens as it fries, adding savoury depth to the sauce.
Carrot
Adds subtle sweetness and body to the flavour base of the sauce.

The step that matters

Stirring the flour until browned. Flour cooked over low heat browns slowly and can scorch if left unattended or heated too fast. Scorched starch tastes bitter and darkens the sauce unevenly, so constant stirring keeps the colour even and the flavour pleasant.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (flour, carrot, ketchup, pepper):

  1. Turnipbetter flavor fit
  2. Capsicumbetter flavor fit
  3. Parsnipbetter flavor fit
  4. Onionthe original

Fit is the average pairing score against flour, carrot, ketchup, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
