Sturgeon Roasted

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Loosen the skin of the sturgeon by slipping a thin knife under it near the back fin.

  2. Sprinkle the flesh with salt and pepper, and place some butter on it.

  3. Prepare a large sheet of kitchen paper and lay sliced onion, carrots, anchovies, parsley, thyme, bay leaves, and pepper on it.

  4. Place the fish on the prepared ingredients, wrap it well, and fold two more buttered papers around it.

Cook and serve

  1. Roast it on a spit over an open fire or bake in a buttered baking tin at 350°F (175°C) for 1.5 to 2 hours, depending on size.

  2. Once cooked, remove the string and papers, glaze it, and serve.

What each ingredient does

Sturgeon
Is the main protein, cooked gently inside its wrapping so the flesh stays moist and flaky.
Butter
Adds richness and moisture to the flesh as it roasts.
Anchovies
Melt into the wrapping, adding savory depth to the fish and aromatics.
Onion
Releases moisture and sweetness as it cooks, flavouring the fish from below.

The step that matters

Wrapping the fish. The fish must be wrapped tightly in buttered paper so its moisture steams inside rather than escaping. Loose wrapping lets the flesh dry out during the long roast.
