Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the firm body of the timbale and absorbs the stock as it cooks.
Butter
Adds richness and helps the outside brown evenly when the rounds are fried.
Parmesan cheese
Adds savoury depth and helps bind the rice as it cools and firms.
Eggs (in the method)
Forms a coating that sets on frying, helping the outside crisp and hold its shape.

The step that matters

Let the rice cool until firm before cutting. Rice must set fully so the rounds hold their shape; cutting or frying it while warm causes it to crumble and fall apart.
