Petites Bouchees a LA Reine

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll out the paste to ¼ inch thick and let it rest in a cool place for 10 minutes.

  2. Stamp out 8 to 10 rounds using a 3-inch cutter and place them ½ inch apart on a wet baking sheet.

  3. Brush the surface with beaten egg.

  4. Dip a smaller round cutter in hot water and mark the surface of each round to form lids, then brush the tops with egg yolk.

  5. Bake in a preheated oven at 350°F (175°C) for 15 to 18 minutes.

  6. Remove the lids and scoop out a portion of the inside while hot.

  7. Mix the chicken, ham, mushrooms, and truffles cut into small dice with the sauce in a stewpan until hot.
