Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Remove the breast from the chicken and skin it.

  2. Flatten the meat with a rolling pin and cut it into two fillets.

  3. Place a raw oyster in the center of each fillet.

  4. Season lightly with pepper, salt, and lemon juice.

Cook and serve

  1. Roll each fillet in a piece of battered paper.

  2. Place them in a pan with a little stock.

  3. Cook in a hot oven at 400°F (200°C) for about 15 minutes.

  4. Remove from the oven, take off the paper, and serve with a white sauce.
