Poached Eggs with Spinach

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Poach the eggs

  1. Bring a pot of water to a gentle simmer.

  2. Grease a small bowl with butter and crack an egg into it.

  3. Carefully lower the bowl into the simmering water and let the egg slide out.

  4. Cook for about 3-4 minutes until the white is set but the yolk is still runny.

  5. Remove with a slotted spoon and drain on paper towels.

Finish and serve

  1. In a separate pan, sauté the spinach with a little butter until wilted.

  2. Serve the poached eggs on a bed of spinach, seasoning with salt and pepper.

What each ingredient does

Eggs
Set proteins form the delicate structure, with the runny yolk giving a rich, creamy texture.
Spinach
Wilts into a tender bed that adds moisture and a mild, green flavour to the dish.
Butter
Adds richness and flavour to the spinach and helps keep the bowl greased for the egg.

The step that matters

Cooking the egg for 3-4 minutes. Egg whites set at around 60 to 70 °C while yolks stay runny at lower temperatures, so timing decides whether the white is firm and the yolk still flows. Too long and the yolk firms up.
