Ingredients

Directions

Prepare the lemon

  1. Roll the lemon to soften it.

  2. Remove the thin outer rind, avoiding the bitter pith.

  3. Place the rind in a small bowl.

  4. Add the lemon juice.

Make the lemonade

  1. Pour the cold water over the mixture.

  2. Add the sugar.

  3. Let it stand for a few hours.

  4. Add more water to make a quart.

  5. Do not use boiling water as it alters the taste.

  6. Add a pinch of carbonate of soda for a fizzy drink.

  7. Mix with a teaspoon of cold water.

Lemon and sugar barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemon
Provides the main flavour, with its juice for acidity and its rind for aroma.
Lump sugar
Adds sweetness that balances the lemon's acidity.
Cold water
Forms the liquid base and dilutes the lemon and sugar to a drinkable strength.
Carbonate of soda
Releases carbon dioxide when mixed, giving the drink a fizz.

The step that matters

Use cold water, not boiling water. Boiling water alters the taste of the lemon, so keep the water cold throughout to preserve the fresh lemon flavour.
