Turkey Scallop

Ingredients

Directions

  1. Crack the carcass of the turkey and place it with skin, fat, and gristle into a saucepan.

  2. Cover with cold water and simmer slowly to make gravy.

  3. Chop the turkey meat very fine.

  4. Grease a pie dish and sprinkle the bottom with breadcrumbs.

  5. Layer minced turkey, stuffing, bits of butter, pepper, and salt in the dish.

  6. Repeat layers until the dish is full, reserving enough breadcrumbs for the top crust.

  7. Once the gravy is ready, strain it and return it to the saucepan.

  8. Thicken the gravy with browned flour mixed with milk and bring to a boil.

  9. Pour the gravy over the scallop, saving a little to moisten the top.
