Sponge Cake Pudding

Ingredients

Directions

Assemble

  1. Arrange the sponge cakes in a deep glass dish, placing the ratafias between them.

  2. Pour about 2 cups of hot milk over the cakes, just enough to soak them without leaving milk in the dish.

Make the custard

  1. Make a boiled custard with 3 cups of milk, 5 or 6 eggs, and a little sugar.

  2. Once the custard is cool enough, pour it over the cakes.

Finish and serve

  1. Grate a little nutmeg on top.

  2. Let the pudding cool completely before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sponge cakes
Soak up the milk and custard, forming the soft, absorbent body of the pudding.
Eggs
Thicken the custard as they set, giving the pudding its structure and smooth texture.
Milk
Provides the liquid that soaks the cakes and forms the custard base.
Ratafias
Add almond-like aroma and flavor distributed between the cake layers.

The step that matters

Let the custard cool before pouring it over the cakes. Hot custard can curdle or scramble the eggs and will soak the cakes unevenly, so it should cool enough to pour gently while still being fluid.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, egg, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Allspicefits less well

Fit is the average pairing score against milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
